WEric Liu stayed with his family in Houston at the start of the March 2020 pandemic, rekindling his love for Korush. In the 19th century, Czech settlers brought these sweet and fluffy pastries to Texas, where they began their lives. “Kolaches are located at every coffee shop and gas station in Houston,” says Liu. “I wondered why I didn’t have these in Chicago.” Liu collaborated with fellow food industry colleague Tom Bovio to launch Howdy Kolache in January. They sell coffee shops such as Portage Grounds and Back of the Yards Coffee, such as Desayuno (choriso, eggs, chihuahua cheese) and Ron Swanson (bacon, eggs, jalapeno).
